Entertain With Healthy And Beautiful Dishes This Summer!!!

BFFs!! One of my all time favorite things to do is to entertain!! I  LOVE having people over, whether it be new neighbors or old friends and family.  A pretty dish can not only be a conversation starter but can really ground people and make them feel comfortable.  Dining together is so social! Mix some gorgeous dishes with great company and drinks and you have yourself a great night!

Pickled Shrimp:

BFFs!!! This is gorgeous and SO easy!  I first got the recipe from Paula Deen… I know most of her foods are majorly unhealthy but this recipe is, and it is a real crowd pleaser!

Seafood: 2 ½ raw fresh shrimp

Produce: 4 Bay leaves, 2 Garlic cloves (whole), 3 Onions

Condiments: 1Tbs Lemon juice

Baking & Spices: Peppercorns, whole

Oils & Vinegars: 1 Cup Cider vinegar

Liquids: 7 ½ cup water

Boil water, add shrimp and cook until just pink, no more than 3 to 5 minutes. Drain well and rinse in cold water to prevent further cooking. Peel and devein shrimp, leaving tails on. In large glass airtight jar (about 1 1/2 quarts *) layer shrimp and onions and top each layer with ground black pepper, peppercorns, bay leaf and a clove of garlic. Keep layering until jar is about 2/3 full. Pour vinegar over layers until jar is almost full. Leave space at the top so you can gently shake jar to remix ingredients. Seal jar tightly and chill for a few days up to two weeks. Turn jar upside down to remix every other day or so. Serve chilled as an appetizer.

Sometimes ill serve it with lemon slices mixed in, it really makes it a beautiful dish!

Watermelon Tomatillo Strawberry Salad: (pickledplum.com)

Produce:  3 Cups cubed watermelon, 12 Mint leaves, 1 Large shallot, 8 Strawberries, 1 Large cup tomatillos

Condiments: 1 ½ tbs balsamic vinegar

Spices: salt & pepper

Oils: 2 tbs Olive oil

Put watermelon, strawberries, tomatillo and shallots in a bowl and gently toss.  Drizzle olive oil and balsamic vinegar and gently toss once more.  Sprinkle black pepper and top with mint.  Season with a little salt and serve immediately.


Salmon Dip:

Bffs! I had some leftover salmon and made a REALLY tasty dip which was SO easy!!!

2 Salmon Fillets, 3 tbs vegan mayonnaise, salt and pepper to taste, sometimes ill garnish with dill which is really delish with salmon!



Tuna Poke

Seafood: 2 lbs sushi grade bluefin ahi tuna (important that it is fresh and tuna grade because you do not cook the tuna in this recipe) chop tuna into bite sized pieces.

Produce: 3 green onions chopped (white and green parts)

Condiments: 1/2 cup tamari or low sodium soy sauce, 1/4 – 1/2 tsp wasabi

Oils: 2tbs toasted sesame oil

Spices: 1 tbs black sesame seeds, 1/2 tbs white sesame seeds

I always mix all the ingredients (other than the tuna) together and taste it before I pour it over the tuna.  If you don’t like spicy foods you may want to omit the wasabi, but it REALLY adds a lot of flavor.


Mediterranean Dip: (themediterraneandish.com)

BFFs! I saw this recipe on Pinterest and FELL IN LOVE!  It is so easy and sooo delish! If you love Mediterranean foods this will definitely satisfy your feta-fix!

Produce: 10 Fresh basil leaves, 1 ½ tbs chives, 1 jalapeno finely chopped with seeds removed, 1 Persian cucumber or ¼ english cucumber chopped into small bite sized pieces (about ½ cup), ¾ cup sun-dried tomato bits

Condiments: 1tsp honey

Dairy: 3 oz cream cheese, 8oz feta cheese

Oils: Olive oil

Place the feta, cream cheese, 1 tbsp olive oil and the honey in a large mixing bowl. With the back of a spoon, press until the cheeses are softened and well-combined. Add the remaining ingredients, 2tbsp olive oil and gently combine. Transfer the feta cheese dip into a serving bowl, and serve with your favorite bread or pita chips.




Cowboy Caviar: (Culinary Hill)

Produce: 1(15oz) can black beans, 1(15oz) can black-eyed peas, 1 cup cilantro (finely chopped), 1(11oz) can corn (unless you have fresh, and that is always better), ½ cup diced green bell pepper, ½ cup diced red bell pepper, 1/2 cup diced yellow bell pepper,  1 red onion finely diced, 1lb roma tomatoes finely diced.

Baking & Spices: 1tsp chili powder, 1 tsp salt, 1/3 cup sugar

Oils & Vinegars: ½ cup olive oil, 1/3 cup white wine vinegar
